A LA CARTE GRILLED CHOPPED LAMB STEAK WITH ROSEMARY
Hello hello guys, welcome back to my blog today i can tell you back what we are doing in kitchen, so keep stay and read my blog until end.
Today we are come back to kitchen for continue a la carte menu we are prepare before, and before doing chef Dino showing how to cut lamb and cut salmon with the portion. after chef Dino show, we are doing and i cut the lamb with method from chef Dino.
And after i cut lamb i give salt and paper after that i wrap and ready for grill by order, and the lamb i put in the chiller. after that i help Muis for cut and scaling portion salmon 150/portion, and give lime, salt, and pepper. and ready for order.
And today i get knowledge from chef Dino and chef Faisal because if you grill a lamb or beef for medium give time 4 minutes and if medium rare 8 minutes. and don't based on timer you must know with look the beef and water contain in your beef, if the drier the water the more cooked meat will be.
And recipe for Lamb steak with rosemary are :
INGREDIENTS
175 gr- onion
60 gr- salad oil
3,5 kg- ground lamb
250 gr- bread crumbs
250 gr- toasted pine nuts
300 ml- milk
30 gr- fresh parsley ( chopped)
10 ml- dry rosemary
12 gr- salt
5 ml- white pepper
25 strips- beef bacon
PROCEDURE
1. Saute the onion in oil until tender. do not brown cool throughly.
2. Mix all ingredients except bacon in a bowl. mix gently until evenly combined. do not over mix.
3. Scale the meat into 150 gr portions. from the portions into thick patties, about 3/4 inch (2 cm) thick.
4. Wrap a strip of bacon around each patty and fasten with picks.
5. Grill or boil the patties under moderate head until done, turning once (see note)
6. Remove picks before serving .
After that open restaurant and we are are ready in the respective section, chef Dino angry and throw a measuring jug in my group because my group just silent if i say plating for lamb. and after that all group completed the order and alhamdulliah today everything gonna be running smoothly.
And after that we are prepare menu tomorrow and after that we are GC and come back to home together,
