Make choux pastry
Hy hy guys ... good afternoon welcome back to my blog, today i am back to tell you about story and what we are doing today so this is story today lets check it...
Today at 05:00 i am wake up and i take bath... after that i am prepare to go to campus, but before i am go i am chek my equipment and after i think all complete i am go to campus.
After i am arrived in campus we are one line in pastry. Senior review about knowledge we get before. After that sir faisal explain about how to make choux pastry, after that we are doing to make choux, And senior make pastry cream for fill the choux.
Recipy for choux
ingredients125ml milk
63gr butter
1gr salt
93gr all purpose
156gr egg
P R O C E D U R E
Mixing:
1. Combine liquid, butter, and salt in a heavy saucepan and bring
to a boil.
2. Remove pan from heat and add the flour all at once. Stir quickly.
3. Return the pan to moderate heat and stir vigorously until the
dough forms a ball and pulls away from the sides of the pan.
4. Transfer the dough to the bowl of a mixer. If you wish to mix by
hand, leave it in the saucepan.
5. With the paddle attachment, mix at low speed until the dough
has cooled slightly. It should be about 140°F (60°C)—still very
warm, but not too hot to touch.
6. At medium speed, beat in the eggs, a little at a time. Add no
more than one-fourth of the eggs at once, and wait until each
quantity is completely absorbed before adding the next. When
all the eggs are absorbed, the paste is ready to use.
And after that we are baking the choux and after baking we fill out the choux and we are gc.
